What makes this cacao so incredibly unique is the growing conditions. Typically, cacao is grown in jungle type environments, however, the Piura region of Peru is a desert region. In this environment the cacao tree has almost no natural predators to defend from, so this particular varietal has evolved to be exceptionally low in tannins. Low tannins mean low bitterness!
Grown by only a few hundred farmers in this region, this origin is known as the fruitiest flavored cacao in the world, with “Blanco” is referring to the unique white color of around 30% of the cacao beans, and documents show that the Spaniards prized this varietal since as far back as the 15th century.
