We are very excited at the opportunity to use this Fiji cacao from the Rakiraki fermentary on the island of Viti Levu! We really wanted to highlight the flavor of this cacao in its purest form, showcasing the natural sweetness that allows us to produce this at 94% cacao.
Last year we missed our shot at getting this cacao before the entire lot was sold out. Their supply is super limited and we don’t know if there’ll be a second batch this year.
It has a great Chocolate flavor, low bitterness, just enough acidity to keep things interesting, and wonderful warm notes of cashews, a creme brûlée type caramelization, and the acidity of a dried plum.
Normally when we look at chocolate in the 90-100% range we personally find it bordering on inedible, but with the natural sweetness shining through with only a restrained bitterness, this one is a pleasure to let melt in your mouth and find your tasting notes.
