What defines a fudge brownie?
Deep chocolate flavor, a little creaminess, a little sweetness, and that warm oven-fresh brownie flavor.
That’s exactly what happened here.
The moment we added a little milk to this cacao, it started tasting unmistakably like fudge brownie batter.
How we did it
We started with cacao that already leaned heavily toward deep chocolate and baked-dessert flavors, then built around it carefully instead of overwhelming it.
Molasses-rich sugar adds depth, while we lightly toast the milk powder before refining to create that warm oven-fresh brownie character tying the whole bar together.
The TL;DR
Warm brownie batter. Deep chocolate. Oven-fresh brownie edges.
Rich, fudgy, smooth, and probably our lowest-yield bar because we keep “checking” to make sure it still tastes like brownies.
