What we were thinking
Most matcha chocolate goes heavily sweet and creamy.
We wanted to go the other direction.
Less “matcha dessert,” more the earthy, grassy, slightly savory side of matcha that makes people obsessed with it in the first place.
How we did it
Filipino cacao from Davao de Oro brings a natural umami depth with a slightly funky, almost culinary character that immediately stood out to us during tasting.
Savory, lightly smoky, and deeply layered, it pairs surprisingly well with grassy matcha without either ingredient overpowering the other. The cacao brings warmth and depth while the matcha keeps everything bright, earthy, and clean.
