What we were thinking
Our first bar ever made - along with several later revisions once we figured out what we were doing.
When we made the first batch of Chocolate Cherry, family members tasting it during production kept saying the cherry flavor was great, but it could use a little more cherry.
We hadn’t even added any yet.
That was when we realized the Tanzanian cacao was doing most of the work for us already. The goal became simple: make something reminiscent of cherry cordial, but darker, more chocolate-forward, and velvety smooth.
How we did it
We start with Tanzanian cacao - naturally bright with distinct cherry character - then blend in freeze-dried tart cherry to push those notes further without turning the bar into candy.
To round it out, we slowly infuse cacao butter with vanilla beans from neighboring Uganda before refining everything together.
