What we were thinking
We wanted to do something uniquely Florida.
Nothing says Florida better than heat, and Florida has its own distinct kind of heat native to St. Augustine: the datil pepper.
Unlike peppers that hit hard immediately, datils build slowly and settle into the back of your mouth. The goal was never “extreme spicy chocolate.” We wanted something warm, layered, and actually enjoyable to keep eating.
How we did it
We built the bar on our Ugandan cacao, chosen for its natural clove-like spice notes and earthy depth.
That base meets our custom spice blend and locally grown datil pepper - a Florida favorite known for its fruity flavor and slow-building warmth.
The chocolate gets room to exist first. The pepper shows up later without overpowering the flavor.
The TL;DR
Dark chocolate. Warm spice. Slow-building heat.
Rich Ugandan cacao upfront with a steady back-of-mouth warmth that builds gradually instead of hitting all at once.
