What we were thinking
Chocolate-covered espresso beans are everywhere, but most of them feel pretty interchangeable.
We wanted to make one that tasted less like a bulk-bin snack and more like something we’d actually build as chocolate makers.
Better coffee. Better chocolate. More flavor.
How we did it
We start with single-origin Peruvian coffee beans, roasted just past medium for a rich espresso bite with notes of walnut, molasses, and dark dried fruit.
Then we slowly pan them in our bean-to-bar dark milk chocolate, made with cacao from Reserva Zorzal in the Dominican Republic. It’s dark enough to hold up to the coffee, with just enough milk to soften the edges.
To finish, we layer in our favorite chai tea from the UK: black tea, ginger, cloves, cardamom, pepper, and lemongrass.
