What we were thinking
For Halloween one year we made white chocolate ghosts filled with a Hazelnut Butter Ganache featuring crispy puffed quinoa.
We wanted something universally loved, but built on the rich backbone of a creamy butter-based ganache, with a light wafer-like crisp reminiscent of certain little hazelnut chocolate balls we all know and love.
It turned out wildly addictive. After eating an unreasonable amount of this stuff with spoons during “R&D,” we decided it deserved to become a breakfast staple rather than a mere passing ghost.
How we did it
We built the spread on single-origin Dominican cacao for a deep chocolate backbone underneath the roasted hazelnut and milk.
A creamy butter-based ganache keeps the texture rich, soft, and heavily chocolate-forward without drifting too sweet, while puffed quinoa adds a light crispy crunch that cuts through the richness and keeps each bite interesting.
