What we were thinking
Chocolate Orange, all grown up.
A nod to those foil-wrapped chocolate oranges from childhood Christmas mornings in Europe - cracked open on the counter with that absurdly satisfying snap.
A snap we felt was important to preserve in this bar.
The goal was to keep the memory intact, but make it darker, more complex, and far more chocolate-forward.
How we did it
We start with complex Ugandan cacao naturally carrying notes of clove, raisin, and a little plum wine in the background.
To balance the spice and fruit, we slowly infuse heated cacao butter with whole Ugandan vanilla beans for 24 hours before adding it late-stage to preserve more of the vanilla aromatics. Ugandan vanilla is naturally high in vanillin, giving it a deep vanilla character with a subtle floral note that works beautifully with the cacao. The fact that both come from the same origin is also just kind of neat.
The orange stays in the background the entire time - present enough to tie everything together, never loud enough to dominate the chocolate.
